Watermelon Aqua Fresca with Mint

(serves 2)


  • 4 c. watermelon, seeds removed
  • 1/4 c. filtered water
  • Pinch sea salt
  • 1/2 c. fresh mint, loosely packed
  • 2 limes juiced


  1. Puree the watermelon, water and salt in your blender.
  2. Divide the mint leaves among your classes and muddle them. Pour the watermelon juice on top and serve with fresh lime or little watermelon slices.
  3. Serve immediately.
  4. Will keep (without the mint) 3 days in an airtight glass jar in the fridge.
