Scrambled Tofu with Creamy Mushroom Sauce

An amazing alternative to eggs… Scrambled tofu…

For the Creamy Sauce:

200 gr Mushrooms

1/2 red onion

1 clove of garlic

sprinkling of dried oregano

sprinkling of dried thyme

1 tablespoon of plain yoghurt

Olive oil

Salt and papper

For the TOFU:

1 white onion

2 cloves of garlic

a handful of spring onions

1 fresh chilli

1 tablespoon of tamari ( or soy sauce)

1 teaspoon of ground turmeric

1 teaspoon of smoky paprika

1 block of firm tofu

Olive oil/Salt/Pappper

 

Instructions:

Cut the Onion, Garlic and Mushroms and stir fry it, when it is ready add some thyme, oregano and yogurt.

For the Tofu:

Cut into small pieces the onion, garlic and chilly. Add scrambled tofu with olive oil, paprika, turmeric, tamari (soy sauce) salt and pepper.
